Keep the applesauce in the fridge for up to 2 weeks (it’s also freezer-friendly). You can use it as an oil replacement in baking recipes (1:1) or an egg replacer (1 large egg = ¼ cup unsweetened applesauce).

This is a basic recipe for making unsweetened applesauce. It's a staple ingredient for vegan recipes since it can be used in many ways. As a replacement for eggs, butter, and oil. As sweetener or snack, and more.

Ingredients
  

  • 4 apples medium-sized. Use your favorite variety, I love Gala
  • 3/4 cup water
  • 2 tbsp lemon juice
  • 1/2 tsp vanilla extract optional for extra flavor

Instructions
 

  • Wash, peel, and core the apples.
  • Then chop them into small pieces and place them in a saucepan or pot.
  • Add the water, lemon juice, and vanilla extract. Mix all the ingredients until combined.
  • Over medium heat, bring to boil and then reduce the heat to low. Cover the pot and let simmer for about 15-25 minutes (depending on the variety of apples) or until the apples are soft.
  • When the apples are soft, mash them or use a blender to obtain a smooth texture of the applesauce.
  • Keep the applesauce in the fridge for up to 2 weeks (you can also freeze it). You can use it as an oil replacement in baking recipes (1:1) or an egg replacer (1 large egg= ¼ cup unsweetened applesauce).
  • Additionally, you can use it as a snack or baby food.

Notes

Based on some research, applesauce stays fresh for 1-2 months in the freezer. I didn’t try it since I always make it and use it immediately or keep it in the fridge for up to 2 weeks.
