- Raw cashews: Soaked overnight in cool water or in hot water for 15-30 minutes, then drained. Substitution: Sunflower seeds or silken tofu for a nut-free version.
- Medjool date, pitted: Adds a natural sweetness. Substitution: Maple syrup.
- Lemon juice: Provides acidity and freshness.
- Apple cider vinegar: Adds a tangy flavor. Substitution: White vinegar or additional lemon juice.
- Coconut aminos: Adds a savory depth. Substitution: Balsamic vinegar for a slightly different flavor profile.
- Unsweetened cashew milk: Creamy base. Substitution: Almond or soy milk for a similar consistency.

VEGAN RANCH DRESSING RECIPE
Equipment
- Blender
Ingredients
- 1 cup raw cashews soaked overnight in cool water or with hot water for 15-30 mins and then drained
- 1 medjool date pitted
- Juice of ½ lemon fresh
- 1 ½ Tbsp apple cider vinegar
- 1 ½ Tbsp coconut aminos or balsamic vinegar
- 1/2 cup unsweetened cashew milk almond or soy milk
- 2 Tbsp water
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp dill dried
- 1 Tbsp parsley dried
- 1 Tbsp green onions fresh finely chopped
Instructions
- In a blender, blend all the dressing ingredients (but the dry parsley, dill and the green onions) until smooth. Add 1 extra Tbsp of water at a time to adjust the desired consistency.
- You can also add more seasoning or herbs to adjust the taste.
- Stir in green onions, dill and parsley.
- Before serving, chill the dressing in the fridge in an airtight container, for best conssitency and flavor.
- Serve with chips and/or veggies and salads (you can also use this dressing as a spread for your sandwiches).
