Cold weather is already here, and soups, like this Vegan Creamy Carrot Soup, are one of our favorite cozy meals. This easy-to-make soup is incredibly creamy, sweet, and rich in carrot flavor. And it’s also free from Gluten, Nuts, and Oils.
The classic carrot soup is a super versatile meal, considering you can eat it alone, as an entrée, or accompanied with salads. Since it’s ready in 30 min, you can make it for lunch or dinner.
HOW TO PREPARE THIS VEGAN CREAMY CARROT SOUP

This easy recipe only requires ten ingredients and one pot to prepare. And to obtain that smooth texture, you’ll need a blender. I prefer immersion blenders for convenience; however, a countertop one works perfectly, too, and even better in terms of creaminess results.
For the preparation, you’ll need:
- Carrots: the star of this recipe. Peel them and slice them into ½ pieces.
- Onion, celery, and garlic: these veggies will add a lot of extra flavors to this soup.
- Vegetable Broth: (Low sodium) for sautéing, cooking, and adding more flavor. We are going to combine it with water also.
- Spices and seasoning: to keep it simple here, we’ll add ginger, salt, and pepper. But, please, feel free to add extras if you like soups spicier or sweeter, etc. Cumin or cinnamon, for example, works well with this soup.
- Light coconut milk: for helping with the creaminess and a touch of sweetness. I prefer the light or lite versions for low-fat options and keeping the recipe lighter.
To prepare this Vegan Creamy Carrot Soup, first, you have to heat ¼ cup of vegetable broth in a large soup pot. Then sauté the onion, celery, and garlic.
Add the carrots and sauté for 5 minutes. Then add the rest of the vegetable broth and the water, stir and bring to a boil, and reduce the heat to keep a gentle simmer for 20 minutes.
When the carrots are tender, mix the preparation with a blender until smooth. Add the coconut milk, stir, and adjust the seasoning as needed.
Serve with your favorite toppings.

VEGAN CREAMY CARROT SOUP
Equipment
- 1 Soup Pot
- 1 Blender
Ingredients
- 2 ¼ cups vegetable broth Low sodium
- 1 yellow onion Medium-sized, chopped.
- 2 celery stalks Finely chopped.
- 2 cloves garlic Minced.
- 1 ½ lb. carrots peeled and chopped in small cubes (about 3 cups of chopped carrots).
- 2 cups water
- 1/2 tsp ground ginger
- 1 ¼ cup coconut milk Canned light or lite. ¼ cup to garnish.
- Salt and pepper to taste
- Parsley and crushed red pepper To garnish. Optional.
Instructions
- In a large soup pot, add ¼ cup of vegetable broth. Over medium heat, sauté the onion and celery until the onion is translucent. Add garlic and sauté for about 30 seconds until fragrant. Then add carrots, ginger, salt, pepper, and sauté for 5 minutes more.
- Add the rest of the vegetable broth and the water to cover the ingredients. Stir to combine.
- Bring to a boil, and then reduce the heat to keep a gentle simmer. Cover the pot and cook for 15 to 20 minutes, or until the carrots are tender.
- Mix the preparation with a blender until smooth.
- Return to the heat, add the light coconut milk and stir until combined.
- Taste the soup and adjust the seasoning if needed.
- Serve immediately with some herbs, more light coconut milk, or your favorite toppings.
Notes
- For obtaining that smooth texture, you’ll need a blender. I prefer immersion blenders for convenience; however, a countertop one works perfectly too, and even better in terms of creaminess results.
- If you have some leftovers, keep them in the refrigerator, covered, for up to three or four days.
- You can also freeze this soup up for up to 6 months.
- The small you chop the carrots, the quicker they’ll cook. So, the cooking time could vary depending on the size you chop them.

Serve it warm with your favorite garnish and some bread! I love this soup with fresh herbs like parsley, and crushed red pepper, and add more light coconut milk.
