There are two methods; one includes using a box grater and the other a food processor. Both are super easy, and quick.

I love how versatile this recipe is! This cauliflower rice can serve as a replacement for white or brown rice in meals and open new ways to include this amazing vegetable on different plates. It can be prepared as a main course, for lunch or dinner, or as a side dish.
RECIPE AND INSTRUCTIONS
HOW TO MAKE CAULIFLOWER RICE
Equipment
- Food processor
- Box grater
Ingredients
- 1 cauliflower medium head
- ¼ cup vegetable stock
- ½ cup onion finely chopped
- ¼ cup parsley fresh, chopped to top for serving
- Salt and pepper to taste optional depending on your dietary needs
Instructions
- Make the cauliflower rice with a box grater or food processor.
- Set a skillet over medium heat with the vegetable stock (you can use water as well), and sauté the onions until translucent.
- Add the cauliflower rice to the skillet and stir fry between 5-8 minutes, uncovered until soft. Add salt and pepper to taste.
- Served topped with parsley.
- You can use this cauliflower rice as a replacement in any recipe calling for rice.
Notes
- Leftovers can be stored in the refrigerator for up to 5 days. Uncooked cauliflower rice is freezer-friendly (you can keep it, up to 1 month)
