HOW TO MAKE CAULIFLOWER RICE

Equipment

  • Food processor
  • Box grater

Ingredients
  

  • 1 cauliflower medium head
  • ¼ cup vegetable stock
  • ½ cup onion finely chopped
  • ¼ cup parsley fresh, chopped to top for serving
  • Salt and pepper to taste optional depending on your dietary needs

Instructions
 

  • Make the cauliflower rice with a box grater or food processor.
  • Set a skillet over medium heat with the vegetable stock (you can use water as well), and sauté the onions until translucent.
  • Add the cauliflower rice to the skillet and stir fry between 5-8 minutes, uncovered until soft. Add salt and pepper to taste.
  • Served topped with parsley.
  • You can use this cauliflower rice as a replacement in any recipe calling for rice.

Notes

  • Leftovers can be stored in the refrigerator for up to 5 days. Uncooked cauliflower rice is freezer-friendly (you can keep it, up to 1 month)
