cauliflower
medium head

cup
vegetable stock

cup
onion
finely chopped
¼
cup
parsley
fresh, chopped to top for serving
Salt and pepper to taste
optional depending on your dietary needs
Instructions
Make the cauliflower rice with a box grater or food processor.
Set a skillet over medium heat with the vegetable stock (you can use water as well), and sauté the onions until translucent.
Add the cauliflower rice to the skillet and stir fry between 5-8 minutes, uncovered until soft. Add salt and pepper to taste.
Served topped with parsley.
You can use this cauliflower rice as a replacement in any recipe calling for rice.
Notes
Leftovers can be stored in the refrigerator for up to 5 days. Uncooked cauliflower rice is freezer-friendly (you can keep it, up to 1 month)
