KITCHEN EQUIPMENT
Here’s a list of kitchen tools and equipment you’ll need for this recipe:
- A chopping board and knife are essential for preparing the tofu and mincing the garlic.
- Tofu press (Optional): This tool is specifically designed to press the excess water out of tofu. If you don’t have one, you can wrap your tofu in a clean towel and place a heavy object on top of it.
- Mixing bowl: You’ll need this for preparing the marinade. A good-sized bowl will allow you to mix the ingredients thoroughly.
- Baking sheet and Parchment Paper: You’ll need these for baking the tofu. The parchment paper helps to prevent the tofu from sticking and makes clean-up easier.
- Spatula or Tongs: These are necessary for flipping the tofu halfway through baking. They’ll help ensure the tofu bakes evenly and gets crispy on all sides.
INGREDIENTS
Here is a list of everything you will need to prepare this lemon and herbs baked tofu:
- Extra-firm tofu: Tofu is an excellent source of protein and a perfect canvas for absorbing the marinade flavors. We’re using firm tofu here because it holds its shape well during baking and has a satisfying texture.
- Zest and juice of a large lemon: Lemon zest and juice add a bright, zesty flavor that balances the earthiness of the herbs. The acid in the lemon juice also helps tenderize the tofu and allows it to absorb the other flavors in the marinade.
- Dried thyme, rosemary, and oregano give the tofu a savory, herby flavor profile. Combining these herbs adds complexity to the dish and complements the citrusy lemon well.
- Minced garlic cloves: Garlic is a flavor powerhouse that imparts a savory, pungent depth to the tofu. It’s an essential ingredient in many dishes, including this one, for its incredible ability to elevate flavor profiles.
- Tamari: This gluten-free version of soy sauce adds a rich, savory (umami) flavor to the tofu. It also aids in giving a beautiful golden color to the tofu once baked. You can also use soy sauce.
- Pure maple syrup: A dash of maple syrup balances the savory and citrusy flavors with a touch of natural sweetness. It also aids in caramelization during baking, contributing to the crispy texture of the tofu.
- Cornstarch or arrowroot starch: These ingredients help to create a crispy coating on the tofu when baked. The starch absorbs any remaining moisture on the tofu, helping it crisp up in the oven.
- Salt and black pepper (optional): These are great seasonings that enhance the dish’s overall flavor. Salt brings out the individual flavors of the other ingredients, while black pepper adds a little bit of heat.
DIRECTIONS WITH PICTURES
Begin the recipe by draining and pressing it for 15-20 minutes to expel excess water.
While the tofu is being pressed, you can focus on preparing the marinade. First, mix the lemon zest, lemon juice, minced garlic, thyme, rosemary, oregano, tamari, maple syrup, salt, and pepper in a bowl. This aromatic mixture is the heart of this recipe.
Once your tofu is ready, cut it into equal-sized pieces and place them in a bowl. Pour the zesty marinade over the tofu, ensuring all sides are well coated.
To give the tofu its delightful crispy exterior, sprinkle the pieces with cornstarch or arrowroot starch, and mix gently, ensuring no white spots are left.
Allow the tofu to marinate for at least 30 minutes, though the longer, the better.
Lay out the marinated and starch-dusted tofu pieces on a parchment-lined baking sheet, and pop it into a preheated 400°F (200°C) oven.
After 20 minutes, flip each slice for even browning and bake for another 15-20 minutes until they are slightly golden brown.
Let it cool for a few moments before serving, and enjoy your deliciously crispy Lemon and Herbs Baked Tofu!

EASY LEMON AND HERBS BAKED TOFU
Ingredients
- 14 oz extra firm tofu (14 oz or 397 grams package, organic if possible)
- 1 lemon (Zest and juice of 1 large lemon)
- 2 tsp dried thyme
- 2 tsp dried rosemary
- 2 tsp dried oregano
- 2 garlic cloves (minced)
- 2 tbsp tamari (or soy sauce if you don’t need GF)
- 1 tsp pure maple syrup
- 1 tbsp cornstarch (or arrowroot starch)
- Salt and pepper to taste optional
Instructions
- Prep the Tofu: Drain the tofu and press it for at least 15-20 minutes to remove excess water. This will allow it to absorb the marinade better.
- Make the Marinade: In a bowl, combine the lemon zest, lemon juice, minced garlic, thyme, rosemary, oregano, tamari, maple syrup. Stir well to combine.
- Marinate the Tofu: Cut the tofu into into equal-sized pieces. Place them in a bowl and pour over the marinade. Ensure all sides of the tofu are well coated. Sprinkle the tofu cubes with cornstarch or arrowroot starch, ensuring all sides are lightly covered and well mixed to avoid any white spots. The marinade should help the starch stick to the tofu. Let it marinate for at least 30 minutes, though the longer, the better (up to 24 hours).
- Bake the Tofu: Preheat your oven to 400°F (200°C). Place the marinated and starch-dusted tofu cubes on a parchment-lined baking sheet, leaving some space between each cube for even baking. Add salt and pepper to taste (optional). Bake for 20 minutes, then flip each cube and bake for another 15-20 minutes until the edges are slightly golden brown.
- Serve and Enjoy: Remove the baked tofu from the oven and let it cool for a few minutes before serving.
Notes
- Press Your Tofu Well. Pressing your tofu removes extra water, allowing it to absorb the marinade better. If you don’t have a tofu press, wrap your tofu in a clean kitchen towel and place a heavy object on top. Press for about 15-20 minutes for the best result.
- Marinate for Enough Time. Marinating is a crucial step in this recipe, allowing the tofu to absorb the flavors of the lemon, garlic, and herbs. Let your tofu marinate for at least 30 minutes, but if you can, leave it for a few hours or even overnight.
- Flip the Tofu Halfway Through. Flip the tofu cubes halfway through baking for a nice, crispy exterior. This step will allow all sides of the tofu to become golden brown and crunchy.
- Use Fresh Lemons for Zest and Juice. Fresh lemons give the most flavorful zest and juice. It will work if you only have bottled lemon juice, but fresh lemons provide a brighter, more robust flavor.
- Adjust to Taste. While the recipe provides specific measurements, adjust the seasoning to your taste. If you prefer a more lemony flavor, add more zest. If you like it spicy, add a dash of chili flakes to the marinade.
- Once your Lemon and Herbs Baked Tofu is prepared, it can be stored in an airtight container in the refrigerator for up to 4-5 days, ideal for meal prepping. Make sure the tofu has cooled completely before storing it to prevent condensation from building up in the container, which could make the tofu soggy.
- The total time in the recipe doesn’t include the marinating time since it depends o how much you leave it marinating.
