For those looking for breakfast recipes ideas that are nutritious as well as delicious, I’m sharing these easy and healthy Banana Oatmeal Cookies.
These cookies are slightly chewy, with the sweetness of overripe bananas (no sugar added) and a touch of coconut flavor.
And even better, with just three ingredients: rolled oats (I used Gluten-Free ones), bananas, and unsweetened shredded coconut.

RECIPE AND INSTRUCTIONS
EASY AND HEALTHY BANANA OATMEAL COOKIES
Ingredients
- 3 bananas Overripe.
- 2 cups old-fashioned oats Gluten Free if need it.
- ⅓ cup unsweetened shredded coconut
Instructions
- Preheat oven to 350 F degrees (180 C).
- Prepare an oven tray with parchment paper or a silicone baking mat.
- In a mixing bowl, place peeled bananas and mash them.
- Add the 2 cups of oats to the mixture.
- Fold the shredded coconut and combine all the ingredients.
- Make the cookies, shaping them with your hands and place them in the baking tray.
- Place them into the oven, and bake them for about 15 minutes (or until they are slightly golden).
- Let the cookies cool and enjoy them!
