The Argentine corn pie is a mouthwatering and versatile dish perfect for any occasion and time of the day. It’s savory mixed with the sweetness of the corn, flavorful, comforting, and creamy. You can enjoy this delicious pie at home with this easy and tasty recipe.

We love eating this pie in Argentina. It can be enjoyed hot or cold, so it’s great for meal prep. The classic recipe includes cheese or some type of dairy product, plus oil or butter for making the pie crust.

So, to continue enjoying this dish, one of my favorite Argentine cuisine, I updated the recipe to enjoy traditional flavors in a new, healthier way, with Whole food plant-based ingredients.

This recipe is free from dairy, gluten, and eggs and caters to those with allergies or dietary preferences. Depending on the Pie Crust you use, this pie is also Nut-Free. It is an excellent choice for anyone looking for delicious vegan options or those simply aiming to incorporate more plant-based meals into their diet.

HOW TO PREPARE THIS VEGAN ARGENTINE CORN PIE

Creating this Vegan Argentine Corn Pie is easy. It begins with preparing a creamy mixture of tofu, tapioca starch, nutritional yeast, lemon juice, and plant-based milk, blended until smooth. This sets the foundation for the pie’s rich texture.

The process continues as you sauté onions and garlic, then add bell peppers until everything is tender. This mixture is then enhanced with the creamy tofu blend and cooked until thickened. Sweet corn and a selection of spices are added for depth of flavor. We add a cornstarch slurry at the end.

To assemble, the filling is spread into a pre-baked plant-based pie crust (I have two recipes in my blog), optionally topped with vegan cheese for an extra flavor dimension.

The pie is then baked until the crust is golden and the filling is beautifully set, ready to be served once cooled.

  • Whole-food plant-based pie crust serves as a crispy, firm base that complements the creamy and savory filling. You can find and use any of these great recipes: vegan oat flour pie crust (GF, Nut-Free) and easy vegan pie crust (GF).

Creamy mixture:

  • Firm tofu: Provides a high-protein, creamy texture that mimics traditional dairy fillings.
  • Tapioca starch: Acts as a thickener, adding a smooth and slightly stretchy consistency.
  • Nutritional yeast: Imparts a cheesy, umami flavor, enhancing the pie’s richness without dairy.
  • Lemon juice: Adds a subtle tanginess, balancing the creamy layer’s flavors.
  • Unsweetened plant milk: Helps to blend the creamy layer ingredients into a smooth consistency, contributing to the overall creaminess.

To prepare this Argentine Corn Pie, follow these steps:

Creamy Mixture: Drain the tofu to remove water from the package, and pat it dry. Blend tofu, tapioca starch, nutritional yeast, lemon juice, and plant milk until smooth.

Filling Prep: Sauté onion and garlic in water with salt until clear. Add chopped red and green peppers and cook until soft.

Mix Creamy Layer with Filling: Add tofu mixture to sautéed veggies. Cook for 5 minutes, stirring, until thickened.

Add Corn and Season: Mix in corn, paprika, nutmeg, garlic powder, salt, and pepper. Create a cornstarch slurry with water and stir into the pan. Cook until slightly thickened.

Assemble the Pie: Preheat the oven to 400°F (200°C). Pour the mixture into the pie crust. Add vegan cheese if desired.

  • 1 whole food plant-based pie crust (partially-baked)

For the Creamy Mixture:

  • 8 oz firm tofu (drained and patted dry)
  • 1 ½ Tbsp tapioca starch
  • 2 Tbsp nutritional yeast
  • 2 Tbsp lemon juice
  • 1/3 cup unsweetened plant-based milk

For the Filling:

  • 1 onion (large, finely chopped)
  • 2 cloves garlic (minced)
  • 1 red bell pepper (small, diced)
  • 1 green bell pepper (small, diced)
  • 2 cans organic sweet corn (15 oz, drained)
  • ½ tsp paprika
  • 1 tsp nutmeg
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • 2 Tbsp organic cornstarch

Optional Toppings:

  • Vegan Parmesan cheese
  • Vegan Mozzarella cheese

Instructions
 

  • Make the Creamy Mixture: Press the tofu to remove excess moisture. Blend the tofu, tapioca starch, nutritional yeast, lemon juice, and plant-based milk until smooth. Set aside.
  • Prepare the Filling: In a large pan, sauté the onion and garlic with a bit of water and a pinch of salt until translucent. Add the diced red and green bell peppers, cooking until soft.
  • Add Creamy Mixture to Filling: Pour the tofu-based creamy mixture into the pan with the sautéed vegetables. Cook for about 5 minutes, stirring occasionally, to allow the mixture to thicken.
  • Combine with Corn and Seasonings: Stir in corn, paprika, nutmeg, garlic powder, salt, and pepper. Make a slurry by mixing two tablespoons of cornstarch with an equal amount of water. Pour the slurry into the pan while stirring continuously. Cook until the filling thickens slightly and everything is well combined and heated through. Let it cool down a little.
  • Assemble the Pie: Preheat your oven to 400°F (200°C). Spread the corn and vegetable mixture into the pre-baked pie crust. Optionally, you can add some vegan parmesan or other vegan cheese.
  • Bake the Pie: Bake in the preheated oven for 25 to 30 minutes, or until the crust and the top of the pie are golden and the filling is set.
  • Serve: Let the pie cool before serving.

  • Cornstarch Alternative: If you’re avoiding cornstarch, arrowroot powder or tapioca flour can be used as a thickener in a 1:1 ratio. This substitution works well for the filling’s consistency.
