Crunchy oil-free chickpea snacks

Let’s be honest—snacks are essential in my kitchen. But snacks that are crispy, flavorful, and healthy? That’s love at first crunch.

These Crispy Chickpeas are like the snack superheroes of the plant-based world.

They are made with simple pantry staples, require no oil, and can be customized to match your mood. Craving something smoky and bold? Try the paprika garlic flavor. Feeling fancy and herby? The zesty lemon thyme will satisfy you. And for those sweet-tooth moments (yes, chickpeas can be used for dessert!), the cinnamon-caramel version is pure magic.

I’ve been making variations of these for years. At first, I added them to crunch my salads, but now we snack on them like popcorn. They are the perfect high-protein vegan snack. If you decide to make all three flavors at once, be prepared—they won’t last long!

WHY THIS RECIPE WORKS AND WHY IS IT GOOD FOR YOU

Chickpeas are little nutritional powerhouses—rich in fiber, plant protein, and minerals like iron and magnesium. Roasting them without oil gives you all the crunch, without the heaviness.

Each of these flavor options has its charm:

  • The Smoky Paprika Garlic is bold and savory—perfect on top of a grain bowl or salad.
  • The Zesty Herb version adds brightness and pairs beautifully with creamy dressings or soups.
  • The Cinnamon-Caramel one? The healthy sweet snack feels like a treat, minus the crash.

Also, they’re super budget-friendly, which is always a win in my book.
