Base:
- 2 cans chickpeas (15 oz each chickpeas, drained, rinsed, and dried)
- 2 tsp coconut aminos (for each savory batch)
- 1 tbsp maple syrup (for the sweet batch)
Smoky Paprika Garlic:
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ¼ tsp onion powder
- Salt and black pepper (to taste)
Zesty Herb:
- 1 tsp dried oregano
- ½ tsp thyme
- Zest of ½ lemon
- Salt and pepper (to taste)
Cinnamon-Caramel:
- 1 ½ tsp ground cinnamon
- 2 tsp date sugar
- ½ tsp vanilla extract (optional)
- Pinch salt
Dry the chickpeas thoroughly using a clean towel. Remove any loose skins.
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Divide chickpeas into three bowls (one for each flavor).
Add base seasoning only before baking: Toss savory batches with 2 tsp coconut aminos. Toss the sweet batch with 1 tbsp maple syrup.
Spread in a single layer on the baking sheet.
Bake for 35–45 minutes, shaking every 15 minutes until golden and crispy.
Remove from oven and while still warm, toss with flavor seasonings: Smoky Paprika Garlic mix, Zesty Herb mix, Cinnamon-Caramel mix
Let cool completely before storing. They will crisp up as they cool.
- Dry thoroughly: The drier the chickpeas, the crispier they’ll get. Don’t skip this step!
- Don’t overcrowd: Spread in a single layer—use two trays if needed.
- Extra crunch: Turn off the oven and let them sit inside with the door cracked for 10–15 minutes.
- Storage: Keep in a glass jar or paper bag at room temperature for up to 3–4 days.
- Re-crisp: Bake at 375°F (190°C) for 5–10 minutes if they soften.
- Air fryer option: Cook at 375°F (190°C) for 12–16 minutes, shaking the basket every 5 minutes.
