Place the coated sweet potatoes in a single layer on the baking sheet and roast them in the oven for 30 to 35 minutes, flipping halfway through, until they are lightly browned and fork-tender. 

Finally, arrange the roasted sweet potatoes on a serving dish, optionally topping them with pomegranate arils and chopped pecans, or enjoy them as is.

For the maple roasted sweet potatoes

  • 3 sweet potatoes (medium size, about 1.1 lbs., around 500 g)
  • 3 Tbsp maple syrup
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp lemon juice (fresh)
  • 2 tsp rosemary (dried)
  • 1 pinch sea salt
  • Black pepper ( to taste)

Optional to serve

  • ½ cup pomegranate arils
  • ½ cup chopped pecans (toasted for 3 to 5 min)

Instructions
 

  • Preheat the oven to 425° F (about 220° C). Line a baking sheet with parchment paper.
  • Rinse the sweet potatoes under warm water, scrub them clean, and leave the skin. Slice* them in 1/4-inch-thick rounds.
  • In a large bowl, combine maple syrup, balsamic vinegar, lemon juice, rosemary, salt, and pepper. Then, toss the sweet potato rounds to coat with the maple mixture.
  • Place the sweet potatoes on the prepared baking sheet in an even layer in the oven and roast them for 30 to 35 minutes** or until lightly browned and fork tender. Flip them over halfway through to make sure they are cooked evenly.
  • Arrange the roasted sweet potatoes on a dish or platter for serving. Top with pomegranate arils and chopped pecans, if desired. Or you can enjoy them without any topping.

Notes

  • * For even roasting, ensure that the sweet potatoes are cut into roughly the same size.
  • You can peel your sweet potatoes. I prefer roasting them with the skins on, which saves time and keeps the nutrients found in the skin.
  • ** The cooking time for sweet potatoes will depend on the size of the pieces you cut them into and how browned you like them.
  • You may need two baking sheets depending on the size of your sweet potatoes and baking sheet.
  • Leftovers can be stored in a sealed container in the refrigerator for up to 3 days.
  • To reheat: Preheat the oven to 400° F (about 200° C). Place the sweet potatoes on a baking sheet, then bake until they’re warm enough, which usually takes around 15 minutes.
