For the maple roasted sweet potatoes
- 3 sweet potatoes (medium size, about 1.1 lbs., around 500 g)
- 3 Tbsp maple syrup
- 2 Tbsp balsamic vinegar
- 1 Tbsp lemon juice (fresh)
- 2 tsp rosemary (dried)
- 1 pinch sea salt
- Black pepper ( to taste)
Optional to serve
- ½ cup pomegranate arils
- ½ cup chopped pecans (toasted for 3 to 5 min)
Preheat the oven to 425° F (about 220° C). Line a baking sheet with parchment paper.
Rinse the sweet potatoes under warm water, scrub them clean, and leave the skin. Slice* them in 1/4-inch-thick rounds.
In a large bowl, combine maple syrup, balsamic vinegar, lemon juice, rosemary, salt, and pepper. Then, toss the sweet potato rounds to coat with the maple mixture.
Place the sweet potatoes on the prepared baking sheet in an even layer in the oven and roast them for 30 to 35 minutes** or until lightly browned and fork tender. Flip them over halfway through to make sure they are cooked evenly.
Arrange the roasted sweet potatoes on a dish or platter for serving. Top with pomegranate arils and chopped pecans, if desired. Or you can enjoy them without any topping.
