WHAT IS A NICE CREAM?

Nice Cream is a healthier, dairy-free alternative to traditional ice cream. It’s made by blending frozen fruit with a liquid, usually non-dairy milk, until it reaches a creamy consistency.

The result is a delicious, nutrient-dense dessert that’s low in calories, sugar, and fat and high in fiber and vitamins.

HOW TO PREPARE THIS STRAWBERRY NICE CREAM

Nice creams are so easy to prepare! It’s our favorite type of dessert year-round at home.

The beauty of this dessert is that you can utilize a variety of frozen fruits from your freezer to create a quick and easy treat. You need to process or blend them, add some plant-based milk, and that’s it; your dessert is ready.

This proves to be an excellent solution for when you have ripe fruits, or they are at their peak. You can store them in your freezer and later use them to satiate your sweet tooth in a healthy and nutritious way.

KITCHEN EQUIPMENT

So, if you are ready, grab your ingredients, and you will need these main kitchen tools for the preparation:

  • Blender or food processor: To blend or process the frozen strawberries, bananas, and soy milk together until smooth and creamy. I personally prefer the texture that is obtained using the food processor.

INGREDIENTS

Here is a list of everything you will need to prepare this delicious strawberry nice cream:

  • Frozen Strawberries: you can use store-bought frozen strawberries. I prefer to use organic ones. Remove the stems, wash them thoroughly, and coarsely chop them to freeze fresh strawberries. Place them on a baking sheet lined with parchment paper and freeze for at least 2 hours.
  • Frozen Bananas: pick large, ripe bananas. They add natural sweetness to the nice cream, which usually eliminates the need for added sugars. They also help with the creaminess. To freeze the bananas, slice them into ¼-inch thin slices and make sure they lay flat in the freezer, using a baking sheet lined with parchment paper.
  • Plant-based milk: I’m using Unsweetened soy milk. Pick organic if you can. You can also use other plant-based milk, like cashew or almond varieties. The plant-based milk helps with the creaminess of this dessert and integrates all the ingredients.
  • Maple Syrup (optional): Maple syrup adds a natural sweetness to the nice cream. It is a healthier alternative to refined sugars and contains antioxidants and minerals like zinc and manganese. It’s optional in case the strawberries aren’t at their sweetest.

DIRECTIONS

To make the perfect strawberry nice cream, blend frozen strawberries, ripe frozen bananas, and unsweetened soy milk until the mixture is smooth and creamy.

If you want your nice cream to be sweeter, add one to three tablespoons of maple syrup and blend again.

Once the mixture is blended, you can either enjoy it as a soft serve or transfer it to a freezer-safe container for a firmer texture. Freeze for at least 1 hour or until the nice cream is firm.

When you’re ready to serve, let it sit at room temperature for 15-20 minutes to soften slightly before scooping it into bowls.

Equipment

  • 1 Food processor (You can use a blender as well. But I prefer the texture and consistency of the food procesor)
  • 1 loaf/bread pan (As a freezer-safe container)

Ingredients
  

  • 3 cups strawberries (frozen)
  • 2 bananas (ripe and frozen)
  • 1/4 cup plant-based milk (I'm using unsweetened soy milk)
  • 1 to 3 tbsp maple syrup (optional if your strawberries are not sweet enough)

Instructions
 

  • Add the frozen strawberries, ripe frozen bananas, and soy milk to a blender or food processor.
  • Blend the ingredients on high until they are smooth and creamy. You may need to stop and scrape down the sides of the blender or food processor a few times to ensure that everything is well blended.
  • If you want your nice cream to be a little sweeter, add 1 to 3 tbsp of maple syrup to the blender or food processor and blend again.
  • Once the mixture is smooth and creamy and with the right level of sweeteness, you can enjoy it with a soft serve consistency or transfer it to a freezer-safe container* for a firmer and more scoopable texture. Freeze for at least 1 hour or until the nice cream is firm.
  • When the nice cream is firm, remove it from the freezer and let it sit at room temperature for 15-20 minutes to soften slightly before serving.
  • To serve, scoop the strawberry nice cream into bowls and enjoy it as is, or top it with your favorite toppings like fresh fruit, chopped nuts, or vegan chocolate chips.

Notes

  • * Cover the container with a lid or plastic wrap to prevent ice crystals from forming.
  • This strawberry nice cream can last up to a month in the freezer when stored in an airtight container. It’s a perfect dessert to make ahead of time and enjoy whenever you’re in the mood for something sweet and refreshing. Let it sit at room temperature for a few minutes to soften before serving.

WAYS TO ENJOY THIS STRAWBERRY NICE CREAM

There are many ways to enjoy this delicious strawberry nice cream:

  • Serve it on its own as a refreshing dessert or pair it with some fresh fruit, such as sliced bananas, strawberries, or blueberries, for a nutritious treat or, why not, breakfast in Summer.
  • For an extra special treat, add some chopped nuts or a drizzle of chocolate sauce (melt vegan chocolate chips with some plant-based milk).
  • Mix in Vegan Chocolate Chips: If you’re a chocolate lover, mix in some vegan chocolate chips for a delicious twist on this strawberry nice cream. You can also top the nice cream with them.
  • Popsicles: Pour the nice cream mixture into popsicle molds and freeze until solid. This creates a fun, handheld treat perfect for hot summer days.
