Perfect fresh, flavorful, and with no coking required meal, this easy and colorful citrus salad with arugula is an excellent option as a side dish but satisfying enough as a light meal on its own.

You’ll find in this salad a good balance between savory and sweet, with the inclusion of peppery arugula, creamy avocado, and a mix of citrus and raisins.

It’s the ideal winter salad with arugula, avocado, oranges, clementines, grapefruit, toasted sliced almonds, shallots, and raisings! Different textures and flavors will make this recipe a keeper for you!

You can easily make it for lunch or dinner.

HOW TO PREPARE THIS CITRUS SALAD WITH ARUGULA

Each time I eat citrus salads, I remember one I enjoyed in a restaurant in Córdoba, Argentina (my hometown). It had a salad bar section with many options, but I always chose one with oranges and onions. So yummy and fresh!

My favorite salads always include veggies and fruits, savory and sweet, as I shared with you before. This winter salad offers that flavorful experience, plus it’s visually beautiful, colorful, and full of nutrients, like vitamin C from the citrus fruits.

Depending on your preferences, you’ll love that this salad is easy to make and customize. Suppose you don’t like bitter veggies and fruits. In that case, you can change the arugula for other greens or the grapefruit for another citrus variety and the quantities to make less or more salad depending on the occasion.

This healthy, flavorful, and colorful salad is Vegan, Gluten-Free, and Oil-free.  

INGREDIENTS

For the preparation, you’ll need:

Citrus dressing

  • Wine vinegar: you can also use apple cider vinegar.
  • Orange juice: will add a good amount of sweetness and flavor to the dressing and, finally, the salad.
  • Lime juice: for a little bit of tang, but still sweet and fresh.
  • Maple syrup: for sweetness and balance with the acidity of citrus and bitter flavor of arugula.
  • Salt and pepper to taste.

Citrus salad

  • Citrus fruits: the stars of the recipe. I love the flavors and colors of oranges, clementines, and grapefruits. But feel free to use your favorite varieties.
  • Baby arugula: to create the base of the salad. You can also use other greens, like spinach. But arugula works so well with citrus. It’s a good balance between sweetness and bitterness.
  • Avocado: It looks beautiful in the salad, and I love to add a different texture and flavor to it.
  • And as final toppings: sliced almonds, chopped shallot, raisins, and parsley. You can add these or others like pistachios, sunflower seeds, dates, mint leaves, and more.

DIRECTIONS

To prepare this citrus salad with arugula, mix all the citrus dressing ingredients in a bowl and set it aside.

Toast the sliced almonds in a dry, heavy skillet over medium-low heat for 1 to 2 minutes or until they’re light golden brown.

Now it’s time to prepare the citrus fruits, peel them, and remove as much pith as possible. The clementines can be easily peeled using your hands and then sliced into wheels.

How to Peel and Cut Oranges and Grapefruits

  1. Cut the ends off.
  1. With a sharp knife, remove the peel and as much pith as possible, following the curves of the fruit.
  1. Slice the citrus into wheels.

Prepare the avocado cut them in half, remove the pit, peel and slice them.

Assemble the salad, starting with the arugula as the base. Drizzle a little of the citrus dressing.

And then add citrus fruits, avocados, almonds, shallot, raisins, and parley.

Drizzle with remaining dressing, and serve immediately.

CITRUS SALAD WITH ARUGULA

Ingredients
  

Citrus dressing

  • 2 tbsp wine vinegar
  • 3 tbsp orange juice
  • 2 tbsp lime juice
  • 1 tbsp maple syrup
  • ¼ tsp sea salt or to taste
  • ¼ tsp pepper or to taste

Citrus salad

  • 5 oz baby arugula
  • 3 clementines
  • 2 oranges cara cara, blood orange, or variety of your choice.
  • 1 grapefruit
  • 2 avocados small or 1 large
  • ¼ cup sliced almonds
  • ½ shallot Small shallot or red onion, finely chopped.
  • ¼ cup raisins
  • ¼ parsley Italian, fresh.

Instructions
 

  • In a small bowl, whisk together all the citrus dressing ingredients. Taste and adjust seasoning. Set aside.
  • Toast the sliced almonds in a dry, heavy skillet over medium-low heat for 1 to 2 minutes or until they’re light golden brown.
  • Prepare the citrus fruits, peeling them and removing as much pith as possible following the curve of the fruit, using a chef knife. Slice them into wheels.
  • Prepare the avocados: cut them in half, remove the pit, peel and slice them.
  • Arrange the baby arugula on a platter, drizzle a little of the citrus dressing, and top with the citrus and avocados slices.
  • Then sprinkle the toasted sliced almonds, shallots, and raisins.
  • Add fresh parsley, the rest of citrus dressing, and serve immediately.
  • Enjoy this fresh, colorful and delicious salad.

Notes

  • You can make this salad ahead: prepare the dressing up to 3 days in advance and store it in the fridge. Refrigerate all the ingredients covered and assembled in the platter a couple of hours before serving. Add the citrus dressing when you are ready to enjoy the salad.

WAYS TO ENJOY THIS CITRIC SALAD WITH ARUGULA

You can make this salad ahead: prepare the dressing up to 3 days in advance and store it in the fridge. Refrigerate all the ingredients covered and assembled on the platter a couple of hours before serving.

Serve it right after drizzling the citrus dressing.

It’s an excellent option as a side dish but satisfying enough as a light meal on its own. You can add some baked tofu or chickpeas to make it even more filling.
