These potatoes are crispy outside and tender inside, that perfect balance that is impossible to resist.
This recipe is a kitchen staple and prepared without any oil. It is a versatile and healthy option, ideal for lunch, dinner, and even breakfast.
HOW TO PREPARE THESE OIL-FREE ROASTED POTATOES

This recipe is incredibly simple and easy, and you’ll be preparing it on repeat like me at home.
In addition, no oil is needed to make the potatoes crispy and golden.
KITCHEN EQUIPMENT
To prepare this delicious vegan antipasto pasta salad, you’ll need the following items/tools:
- Chopping board and knife to cut the potatoes.
- A set of bowls for mixing the ingredients and coating the potatoes.
- And a baking sheet for cooking the potatoes, and that’s it.
INGREDIENTS
For the preparation, you’ll need:
- Gold petite (or baby) potatoes: I love this variety because the skin is super thin, and you need to cut them into bite-sized pieces, and they’re ready to cook. However, please feel free to pick your favorite type of potatoes. The ingredients and steps are the same, but the cooking time might change slightly.
- Vegetable broth: to hydrate the potatoes a little since we’re not using oil.
- Dried herbs and seasonings: I’m using rosemary, parsley, and garlic salt because, for me, it is the perfect combination for potatoes, but you can use your favorite herbs and also fresh ones as well. Sometimes, having them dried is convenient.
DIRECTIONS WITH PICTURES
The first step to prepare these roasted potatoes is to wash and scrub them while preheating the oven to 425°F (220°C).
After cutting them into equal-sized pieces, add the potatoes into a bowl with the vegetable broth, herbs, and seasoning. Toss them until all the pieces are coated.
Roast the potatoes in a baking tray with parchment paper or a silicone mat for about 20 to 25 minutes.
Serve them with your favorite main dish, and enjoy.

OIL-FREE ROASTED POTATOES
Equipment
- chef knife
- chopping board
- mixing bowl
- Baking sheet
Ingredients
- 2 lb. baby potatoes Small gold petite potatoes. You can also use Yukon gold or potato of your choice.
- 1 tbsp vegetable broth Low sodium.
- 1 tbsp rosemary Dried.
- 1 tbsp parsley Dried.
- 1 tbsp garlic salt
Instructions
- Preheat oven to 425°F (220°C).
- Prepare a baking tray with parchment paper or a silicone baking mat.
- Wash and scrub the potatoes (keep the skin), rinse and pat dry with a kitchen or paper towel. Cut them into equal-sized or bite-sized pieces (I usually cut them in halves or quarters).
- Place the potatoes in a bowl, add the vegetable broth, herbs and seasoning, and toss to coat all the pieces.
- Transfer them into the prepared baking tray*, creating a single layer with space in between (make sure the tray is not crowded to help the roasting process).
- Roast in the preheated oven for about 20-25 minutes (middle rack), or until they are crispy and golden, outside and tender inside (test the tenderness with a knife).
- Remove from the oven, serve and enjoy!
Notes
- *Try not to transfer the liquid of the bowl into the tray. You can cook the potatoes in batches to not overcrowd the tray.
- Time in the oven can vary depending on the size of the potato’s pieces, the type of oven, and how tender or roast you like your potatoes.
- You can use fresh instead of dried herbs.
- Store leftovers in the refrigerator for up to 3-4 days.
- Leftovers can be reheated in the oven, 425°F (220°C), for a couple of minutes until they are firm and crisp again (you can cover them with foil).
