Ingredients
  

  • 4 cups watermelon (seedless and cubed)
  • 2 cups grapes (red or green, halved)
  • 2 cups cucumber (cut into 1-inch chunks)
  • 1/2 cup vegan feta cheese (crumbled, use oil-free tofu feta)
  • 1/4 cup fresh mint leaves (chopped)
  • 1/4 cup fresh basil leaves (chopped)
  • Juice of 1 lime
  • 1 Tbsp maple syrup (optional for added sweetness)
  • Salt and pepper to taste

Instructions
 

  • Prep the Fruit/Veggie ingredients: Cut the watermelon into bite-sized cubes, removing any seeds if necessary. Cut the cucumber into 1-inch chunks. Halve the grapes, ensuring they are seedless.
  • Assemble the Salad: In a large mixing bowl, combine the cubed watermelon, halved grapes, and cucumber chunks. Add the chopped mint and basil leaves. Gently toss the fruit and herbs together.
  • Add the Dressing: In a small bowl, whisk together the lime juice and maple syrup (if using). Pour the dressing over the watermelon and grape mixture. Toss gently to coat.
  • Finish with Feta: Add the crumbled vegan feta to the salad and gently mix—season with salt and pepper to taste.
  • Serve: Transfer the salad to a serving bowl. Garnish with additional mint or basil leaves if desired. Serve immediately as a refreshing summer dish.
