- 4 cups watermelon (seedless and cubed)
- 2 cups grapes (red or green, halved)
- 2 cups cucumber (cut into 1-inch chunks)
- 1/2 cup vegan feta cheese (crumbled, use oil-free tofu feta)
- 1/4 cup fresh mint leaves (chopped)
- 1/4 cup fresh basil leaves (chopped)
- Juice of 1 lime
- 1 Tbsp maple syrup (optional for added sweetness)
- Salt and pepper to taste
Prep the Fruit/Veggie ingredients: Cut the watermelon into bite-sized cubes, removing any seeds if necessary. Cut the cucumber into 1-inch chunks. Halve the grapes, ensuring they are seedless.
Assemble the Salad: In a large mixing bowl, combine the cubed watermelon, halved grapes, and cucumber chunks. Add the chopped mint and basil leaves. Gently toss the fruit and herbs together.
Add the Dressing: In a small bowl, whisk together the lime juice and maple syrup (if using). Pour the dressing over the watermelon and grape mixture. Toss gently to coat.
Finish with Feta: Add the crumbled vegan feta to the salad and gently mix—season with salt and pepper to taste.
Serve: Transfer the salad to a serving bowl. Garnish with additional mint or basil leaves if desired. Serve immediately as a refreshing summer dish.
- Vegan Feta: For the best results, use this oil-free vegan feta recipe from the blog. If you don’t have it ready, marinate tofu in lemon juice, apple cider vinegar, and herbs as a quick substitute.
- Choosing Watermelon: For the juiciest salad, choose a ripe watermelon that feels heavy for its size and has a deep, uniform color. See more details in the section How to pick the best watermelon
- Grape Variety: For added color contrast, you can use red or green grapes or a mix of both.
- Herb Variations: If you don’t have fresh mint or basil, try using fresh cilantro or parsley for a different flavor twist.
- Optional Add-ins: For extra texture, pomegranate seeds or arugula.
- Storage: This salad is best enjoyed immediately but can be stored in the fridge for up to 1 day. The watermelon may release some juice, so drain it if needed before serving.
- Serving Suggestion: Serve chilled for the most refreshing experience. This salad pairs well with grilled veggies, vegan burgers, or as a light stand-alone dish.
