SUPER EASY CHICKPEAS BURGERS

These are super easy vegan chickpeas burgers, you'll love! Crispy on the outside, soft on the inside and packed with flavor and nutritious ingredients.

Ingredients
  

  • 15 oz. chickpeas 1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained (reserve the liquid). You can also use cooked chickpeas (1 1/2 cup)
  • 1 cup old-fashioned oats Gluten-Free if needed
  • 2 tbsp tapioca flour or tapioca starch
  • ¼ cup parsley fresh
  • ½ red onion medium-sized
  • 1 scallion
  • ½ cup carrots grated
  • 1 celery stalk
  • 3 tbsp aquafaba liquid of chickpeas can
  • 3 tbsp ketchup
  • 1 tsp garlic powder
  • ½ tsp Italian seasoning
  • Salt and pepper to taste optional

Instructions
 

  • Pre-heat oven to 350 degrees F (180 C).
  • Prepare a baking tray with parchment paper.
  • Add the oats to a food processor. Pulse the oats a few times until you get a flour-type texture (it doesn’t have to be perfect, just getting smaller pieces is ok). Set aside.
  • Add the chickpeas to a food processor with the rest of the ingredients (except for the oats and tapioca flour). Process them until reaching the texture of your preference.
  • Transfer the mixture to a bowl, and add the tapioca flour and the oats. Mix well all the ingredients (you can adjust the consistency here by adding more oats or aquafaba).
  • Form into 5 to 6 patties depending on the size.
  • Place them in the baking tray.
  • Bake for 15 minutes, turn them, and bake the burgers for an additional 15 minutes (or until golden on the outside).
  • Serve the burgers with buns, favorite toppings, or just with a salad or any other favorite side dish.
