PEACH AND BLACK BEAN SALAD

This Peach and Black Bean salad is super easy to prepare! It’s refreshing, colorful, and delicious!
You can enjoy it as salad, main or side dish, or serve it with tortilla chips.

Ingredients
  

Salad

  • 2 yellow peaches pitted and diced
  • 1 can of black beans (15 oz) drained and rinsed
  • 3 roma tomatoes diced
  • 3 green onions chopped
  • ½ cup cilantro chopped fresh leaves
  • 2 avocados pitted, peeled, and diced

Dressing (Easy citrus vinaigrette dressing)

  • 2 tbsp lime juice fresh
  • ¼ cup orange juice fresh
  • 2 tbsp balsamic vinegar
  • 2 tbsp water
  • 1 tsp garlic powder
  • salt and pepper to taste

Instructions
 

  • In a small bowl, stir the lime and orange juice, balsamic vinegar, water, garlic powder, salt, and pepper. Set aside.
  • Combine the peaches, black beans, tomatoes, avocados, green onions, and cilantro in a large bowl.
  • Pour the vinaigrette over the salad, stir gently to combine. Taste the salad, and adjust the salt if you need it.
  • You can enjoy it as salad, main or side dish, or serve it with tortilla chips.

Notes

  • Enjoy this salad within 24 hours since the avocados turn brown after that period.
