These Date Pistachio Bites are a delicious and easy whole-food plant-based snack. They are refined sugar-free and oil-free, perfect for a healthy treat.

Ingredients
  

  • 1 1/2 cups Medjool dates (pitted)
  • 1 cup raw pistachios (plus extra for coating, if desired)
  • 1/2 cup rolled oats
  • 1/4 cup unsweetened shredded coconut (optional)
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 pinch sea salt

Instructions
 

  • Prepare the Ingredients: If your dates are a bit dry, soak them in warm water for 10 minutes, then drain them well before using.
  • Blend: In a food processor, pulse the pistachios until coarsely ground. Do the same for the oats. You can blend both together or separately. I prefer to use a small coffee grinder for the oats.
  • Add Dates and Flavorings: Add the pitted dates, shredded coconut (if using), ground cinnamon, blended oats, vanilla extract, and a pinch of sea salt. Process until the mixture comes together and is sticky enough to form into balls. You may need to scrape down the sides of the food processor a few times.
  • Form Bites: Scoop out about one tablespoon of the mixture and roll it into a bite-sized ball. Repeat with the remaining mixture.
  • Coat (Optional): Roll the bites in finely chopped pistachios or shredded coconut for extra crunch and presentation.
  • Chill: Place the bites in an airtight container and refrigerate for at least 30 minutes before serving. This helps them firm up and enhances their flavor.
  • Serve: Enjoy these Date Pistachio Bites straight from the fridge for a quick energy boost or a healthy treat.

Notes

  • Storage: These bites can be stored in an airtight container in the refrigerator for up to one week or in the freezer for up to one month.
  • Texture Tip: If the mixture seems too dry to form into balls, add 1-2 teaspoons of water until it reaches the right consistency.
