Blend: In a food processor, pulse the pistachios until coarsely ground. Do the same for the oats. You can blend both together or separately. I prefer to use a small coffee grinder for the oats.
Add Dates and Flavorings: Add the pitted dates, shredded coconut (if using), ground cinnamon, blended oats, vanilla extract, and a pinch of sea salt. Process until the mixture comes together and is sticky enough to form into balls. You may need to scrape down the sides of the food processor a few times.
Form Bites: Scoop out about one tablespoon of the mixture and roll it into a bite-sized ball. Repeat with the remaining mixture.
Coat (Optional): Roll the bites in finely chopped pistachios or shredded coconut for extra crunch and presentation.
Chill: Place the bites in an airtight container and refrigerate for at least 30 minutes before serving. This helps them firm up and enhances their flavor.
