- 2 cups soy milk (organic, unsweetened. Or Plant-based milk of your choise)
- ½ cup chia seeds
- 2 Tbsp maple syrup
- 1 ½ cups mixed berries (strawberries, blueberries, raspberries)
- ½ cup sliced almonds (optional)
- Fresh mint leaves for garnish (optional)
Blend the Berries: Place 1 cup of mixed berries, soy milk, and maple syrup in a blender. Blend until smooth. This step will give the mixture a beautiful color and enhance the berry flavor throughout the pudding.
Prepare the Base: In a medium-sized bowl, combine the blended berry mixture and chia seeds. Stir well to ensure the chia seeds are evenly distributed.
Let It Set: Cover the bowl and refrigerate for at least 4 hours, or overnight, until the mixture thickens and becomes pudding-like.
Assemble the Jars: Once the pudding has set, divide it evenly into four 8 oz mason jars.
Add Toppings: Top each jar with the remaining ½ cup of mixed berries and a sprinkle of sliced almonds (optional).
Garnish and Serve: Garnish with fresh mint leaves if desired. Close the jars and keep them refrigerated until ready to serve. Enjoy your delicious berry chia pudding!
- Storage: The pudding can be stored in the refrigerator for up to 5 days. It's a great option for meal prep.
- Chia Seed Ratio: You can slightly increase the chia seeds if you prefer a thicker pudding. Conversely, reduce them or add more plant-based milk for a thinner consistency.
- Sweetness Level: Adjust the amount of sweetener to your taste. If using dates, blend thoroughly to ensure they are fully incorporated and smooth the mixture.
- Berry Variations: Feel free to experiment with different berries or mix in other fruits like mango, kiwi, or peaches for a unique twist.
- Nut-Free Option: If you have nut allergies, omit the sliced almonds and consider using sunflower or pumpkin seeds for added crunch.
- Blending Tip: Use a high-powered blender to ensure the berries and dates are fully pureed for the smoothest consistency.
