BLUEBERRY & STRAWBERRY LEMONADE POPSICLES

These Blueberry & Strawberry Lemonade popsicles will be a great way to cool off on a hot summer day. Healthy, colorful, and with only fruits!

Ingredients
  

  • ½ cup fresh blueberries for the lemonade + ¼ extra for adding into the molds.
  • ¼ cup fresh strawberries for the lemonade + ¼ extra for adding into the molds.
  • ¼ cup lemon juice fresh.
  • ¾ cup water
  • 3 Medjool dates pitted (optional if berries aren’t sweet enough for you).

Instructions
 

  • Place the blueberries (1/2 cup), strawberries (1/4 cup), lemon juice, water, and dates in a blender to make the blueberry, strawberry lemonade.
  • Blend until smooth and combined.
  • Taste to adjust some of the flavors. Set aside.
  • Add the extra blueberries and strawberries (cut the strawberries into thin pieces) into the molds.
  • Then pour the blueberry, strawberry lemonade into popsicle molds.
  • Add the sticks and freeze for 4-5 hours or until they are frozen (I usually make them and let them freeze overnight).
  • Enjoy your healthy and fresh yummy snack!

Notes

  • If the dates are a little bit hard on your blender, you could soak them in water for 2 hours previous to the popsicle preparation.
  • Always test the preparation before pouring it into the molds and placing it in the freezer. The mixture will taste less sweet once it is frozen.
